Italian Sausage & Kale Soup with Tortellini
There is no doubt that everyone will love this easy and delicious Italian Sausage & Kale Soup with Tortellini. The best part…it comes together very quickly and it’s a real crowd pleaser. If you want to make this soup a little spicier, add hot sausage! Be sure not to over cook the tortellini and use the best parmesan!

Italian Sausage & Kale Soup with Tortellini

This hearty and healthy soup is quick, delicious and perfect for a cold evening!
Ingredients
- Qood quality olive for cooking sausage - drizzle in pot
- 1 pound mild Italian sausage, casings removed
- 1 1/2 yellow onions, diced
- 5 garlic cloves, minced
- 6 - 8 cups chicken broth
- 2 -14 ounce cans crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon salt or more to taste
- 1 large bag of chopped kale
- 12 ounces fresh tortellini
- 1 cup half & half
- Shaved Parmesan cheese
- 1/4 - 1/2 Crushed Red Pepper Flakes
Instructions
- Heat a large soup pot over medium-high heat and add olive oil.
- Add the sausage, onions and garlic to the pot. Break up the sausage while and sauté until the onions are soft and translucent, about 5 minutes.
- Add the chicken stock, crushed tomatoes and tomato paste. Stir until tomato paste is fully incorporated.
- Bring to a boil, season with salt then simmer for 15 minutes.
- Add the kale and simmer for 15 minutes until the kale is wilted. Add the tortellini and half & half and cook 5 more minutes until the pasta is tender.
- Serve with parmesan cheese and red pepper flakes if desired.
