The Most Delicious Homemade Chicken Salad

I often eat chicken salad with avocado and crackers for lunch and usually it’s chicken salad that I bought at the grocery store, but I’ve been craving some really good homemade chicken salad, so I decided to make some.

Homemade is always better and my chicken salad starts with roasted chicken breasts that have been drizzled with olive oil, seasoned with Rotisserie Chicken seasoning, kosher sea salt and freshly ground black pepper. I roast the chicken in the oven on 400 degrees for about 20 minutes. This chicken is so delicious on it’s own and perfect to use in a bowl with rice or on a green salad, but it also makes the best chicken salad. I make it differently depending on what I’m craving, and this time, I used halved red grapes, lots of celery, chopped red onion, mayonnaise (I use Dukes), a little ranch seasoning, dried thyme and more salt and pepper. It was so delicious!

Serve this chicken salad any way you want…on a bed of lettuce with crackers and sprouts, or make a sandwich with thick slices of toasted bread, lettuce, tomato and avocado.

If you’re in a hurry, you could use rotisserie chicken, but it won’t be quite as good. You could also roast the chicken ahead of time and put it in the refrigerator.

Serve the chicken salad on a bed of lettuce with extra grapes and serve with sprouts!

Or…serve on toasted bread with lettuce, tomato and avocado!
