Charred Carrots with Pine Nuts & Roasted Beet Salad
I'm so excited to share these two recipes with you! The Charred Carrots are beyond fabulous and I wish I could just feed you a bite right now! The carrots are charred with ground fennel and coriander, a little olive oil and salt and pepper and then roasted in a 300 degree oven. They are then topped with a vinaigrette consisting of lemon juice, butter, scallions and pine nuts. They are so delicious!
I also love the Roasted Beet Salad with Blue Cheese and Oranges! This combination is so amazing! The roasted beets are tossed with orange zest and juice, salt and pepper and rosemary and then dressed with a blue cheese sauce. These two recipes will be featured in my new YouTube Videos and I can't wait for you to see them!
The carrots are charred in a skillet with ground coriander and ground fennel.
The pine nut and scallion vinaigrette is added after the carrots are roasted until tender.
